Easy Enchiladas-- A husband favorite.
These enchiladas are great- and more importantly their husband approved.
Easy Enchiladas {adapted from here}
Here's what you'll need:
- 1lb. ground beef
- Packet of taco seasoning
- 1 can enchilada sauce
- 1 bag Mexican blend shredded cheese
- 1 can diced tomatoes, drained
- 1/2 cup water
- Tortillas
- Sour cream, optional
Preheat your oven to 350*
Brown the ground beef in a large skillet, drain any excess grease. Return to stove. Mix in taco seasoning, tomatoes and water. Spray a 9x13 pan with cooking spray. Pour about 1/3rd of the can of enchilada sauce into the bottom of the pan. Fill a tortilla shell with about 1/3rd cup of the meat mixture, roll and place into pan with the edges down. Continue until the meat mixture is gone. Pour remaining enchilada sauce over the rolled tortillas. Top with bag of cheese. Bake for 30 minutes.
Serve with a dollop of sour cream. {I also served the enchiladas with a side of Spanish rice.}
This was the first time I'd ever tried this recipe- and I'm so glad that I did. We all loved it!!
